The potato originally comes from various landraces. These range from the Andes, from western Venezuela to Argentina in the south of Chile. In Germany, the first potatoes are said to have been cultivated around 1647 in what is now Upper Franconia.

Specifically, potatoes contain antioxidants such as the secondary plant substances flavonoids, phenolic acids and anthocyanins as well as vitamin C and vitamin B1. Potatoes cooked with their skin on contain almost twice as much vitamin C as peeled potatoes.

Cool, frost-free, dry and darkened rooms are ideal for storing potatoes. The tubers can also be stored in large quantities for weeks or even months. The optimum storage temperature is between 4 and 6 °C.

Wie alles begann Am Anfang stand ein kleiner Familienbetrieb und der Gedanke, dass ökologischer Landbau ein Weg sein kann, die traditionelle und natürliche Beziehung zum eigenen Boden aufrecht zu erhalten. Möglichst viel Fläche gemeinsam biologisch zu bewirtschaften, bedeutet auch, die gesundheitlichen und Umweltbelastenden Gefahren einer chemieintensiven Landwirtschaft auszuschalten. Daraus entstanden unsere eigenen biologischen Anbauprojekte und eigene Verarbeitungsstätten.
