ÖMA Taleggio DOP, Demeter - Theke

ÖMA Taleggio with a protected designation of origin is an Italian classic with a buttery, aromatic red cheese flavor. The outstanding Demeter milk, which is obtained from dairy cows with horns, characterizes the particularly high quality of this soft cheese. As it continues to mature, ÖMA Taleggio DOP develops from a subtle red cheese to a melt-in-the-mouth, tangy and aromatic soft cheese highlight. A characteristic feature of this Italian specialty is the 'wild' mould formation on the almost orange-yellow cheese rind, which absolute cheese connoisseurs eat with particular relish. Taleggio has been awarded the DOP seal (Denominazione d'Origine Protetta) - also known here as a protected designation of origin - which clearly specifies where this specialty is produced, processed and how it is made. Incidentally, Taleggio is one of the oldest known soft cheeses, as it was already being made in caves in Val Taleggio in Lombardy before the 10th century according to traditional recipes.
Taleggio is often eaten as a bread topping. The longer it matures, the creamier its cheese paste becomes and towards the end of its shelf life it is almost ready to be spooned out. The rind, which looks increasingly 'wild' as it matures, also gives the taste a strong note. Taleggio is also recommended for rounding off strong sauces or for gratinating hearty dishes.

Unsere Weichkäse mit Rotkultur sollten vor dem Verzehr ca. 1 h Zimmertemperatur genießen dürfen. Sie lagern bestenfalls im unteren Bereich des Kühlschranks bei ca. 4-6°C in ÖMA Käsepapier (Käsepapier immer für das selbe Stück Käse verwenden).
