Character & Flavor: Aurora Gold Porcini is a hard cheese aged for four weeks and made from high-quality Bioland milk. The combination of porcini mushrooms, onions, and pepper gives the cheese a balanced, hearty aroma with spicy and slightly earthy notes.The porcini mushrooms define the cheese s character with their typical, aromatic mushroom flavor. Onions add extra zest, while pepper rounds out the recipe with a subtle heat. Thanks to the four-week aging period, the ingredients blend harmoniously with the mild cheese base. Aurora Gold Porcini is particularly well-suited for lovers of spicy cheese specialties and fits perfectly into fall and regional assortments. Milk & Processing High-quality Bioland milk is used for Aurora Gold Porcini. Bioland agriculture stands for ecological farming practices, high standards for animal welfare, and the responsible use of natural resources. The Aurora family cheese dairy has been processing exclusively organic milk since 1980. For production, the milk is pasteurized but not standardized. This preserves the milk s natural composition, including its natural fat content. The cheese is made with vegetarian rennet. After production, it is immersed in a sea salt brine bath for several days. This step promotes the formation of a natural rind and lays the foundation for subsequent aging. The cheeses are then aged on spruce wood boards and carefully tended during this time until they have developed their typical flavor and characteristic texture. After a maturation period of four weeks or more, the cheese is naturally lactose-free. Seasonal Variations Since the milk used is not standardized, its natural properties are preserved. Seasonal changes in feed and grazing can affect the milk s fat content, flavor, and color. As a result, natural variations between individual batches are possible. These differences are a typical characteristic of artisanal cheeses made from non-standardized Bioland milk. The color and distribution of the porcini mushrooms used may also vary slightly within the range of characteristics typical for this product. Texture & Consistency Thanks to the four-week aging period, Aurora Gold Porcini develops a smooth, easily sliceable consistency. The cheese remains pleasantly creamy and is interspersed with pieces of porcini mushrooms, onions, and peppercorns. Aging on spruce wood boards helps develop a balanced texture and a harmonious flavor.

Biokäserei Aurora - Familienbetrieb seit über 38 Jahren


Im idyllisch gelegenen Ven-Zelderheide in Nord Limburg (NL) liegt die Familienkäserei Aurora. Damals, in 1980, waren wir Pioniere im Bereich der biologischen Milchverarbeitung und wurden wegen unserer Arbeit oft belächelt.
Heute zählen wir zu einer der wenigen Käsereien, die ausschließlich Biokäse herstellt. Die Käserei wird durch die Mitarbeit unserer vier Kinder schon jetzt tatkräftig unterstützt und wird auch in Zukunft in Familienführung bleiben.

Die Milch erhalten wir von unseren 11 Landwirten aus dem niederländischen Achterhoek und 6 Landwirten vom Niederrhein. Aus dem qualitativ hochwertigen Rohstoff, stellen wir nach traditionell niederländischer Käsereikunst unsere Käse her.

Nach den Pöckeln im Meersalz lageren die Laibe in unserer solarbetriebenen Halle und reifen heran zu den Käsen mit dem typischen Aurora Geschmack!
