Martinshof Beef Shank from Bioland Cattle
Delivered fresh-frozen. Prepare within 3 4 days.

The meat in these shank cuts is heavily marbled with connective tissue. This makes it ideal for slow braising and stewing. For low-temperature cooking: at least 3 hours at 100°C in the oven the longer you cook it, the more tender it becomes.

Recipe tip:
3 shank slices, 2 oranges, 3 onions, 2 garlic cloves, salt, pepper, 2 tbsp flour, 2 tbsp clarified butter, 250 ml dry red wine, 3 bay leaves, 1 glass of beef stock, 2 cans of tomatoes, thyme, rosemary, 1 small Hokkaido squash, celery, parsley

Grate the orange zest and set aside; squeeze out the juice. Season the meat on all sides with salt and pepper.Coat in flour and sear in clarified butter for 5 minutes. Remove the meat from the pan, then sauté coarsely chopped onions in the pan until translucent. Add the pressed garlic and meat slices to the pot, pour in the red wine, and let it reduce almost completely over high heat.

Add bay leaves, beef stock, rosemary, thyme, and orange juice along with the crushed tomatoes. Cover and simmer gently for about 60 minutes. Add more wine or water if necessary.
Add the diced pumpkin and a small portion of diced celery to the meat and let it simmer for another 60 minutes.

Serve sprinkled with orange zest and chopped parsley.

Martinshof - A Tradition of Organic Farming Since 1986

The farm in the Saarland was founded as early as 1984 as a true pioneer in organic farming. The founders, Gerhard and Monika Kempf (Dipl.Ing.int.agr.), began with a dairy goat herd, a herd of suckler cows, vegetable farming, and crop production. In 1986, the farm received Bioland certification.
Today, young farmer Martin Stoll manages the farm and its livestock operations. The Kempf family handles the processing and marketing of Martinshof products. They place great emphasis on the transparent processing of exclusively Bioland-certified goods and collaborate with many regional producers. On-site production with their own teams ensures a high level of reliability in terms of quality and freshness.
With approximately 100 employees, they operate the Bioland butcher shop, the Bioland cheese dairy, the  Biobus  delivery service, the  bio vom Bauernhof  online store, and two retail locations on the established farm in the Ostertal valley. These include a large natural foods store,  Martinshof Stadtladen,  in the heart of the capital city of Saarbrücken, and a smaller  Martinshof Hofladen  in St. Wendel.  Martinshof products can be found in many natural food stores, in some Globus and Edeka supermarkets, and under the French brand name  ferme du bio  in organic stores throughout France.
