All beetroot varieties are very low in calories. So 100 g yellow beets have only about 40 calories. The root vegetable also contains 1.5 g protein, 10 mg vitamin C, many vitamins of the B
group and only 0.1 g fat, as well as iron, zinc, sodium and magnesium.
Recipe tip for a sun-yellow salad.
Boil the tubers, covered with water, for approx. 30 min. cold quench, peel and let cool. Cut into slices. Cut an apple into small cubes and add. Mix with apple vinegar, sunflower oil or
salad oil, some herb salt, a pinch of turmeric and a dash of lemon. Sprinkle with dry-roasted sunflower seeds before serving.
