Black salsify

Black salsify originates from Spain, where it was long considered only a medicinal plant. Since the 17th century, it has also been cultivated as a vegetable. Today, it is mainly found in France, Belgium, the Netherlands and southern Germany.
Black salsify has a nutty, earthy taste reminiscent of asparagus, which is why it is also known as winter asparagus.

It contains vitamins A, B, C and E, as well as potassium, manganese, calcium, iron and magnesium.

Black salsify is best stored in the vegetable compartment of the refrigerator, where it will keep for 2 to 3 days. It can also be stored wrapped in newspaper in a dark, cool room.
