The colourful variety of carrots
Orange: The classic, with a sweet flavour and rich in beta-carotene
Purple: Contain anthocyanins, which act as antioxidants and have an intense sweet flavour
Yellow: Less sweet and ideal for savoury dishes
White: Mild in flavour and versatile in use
Red: Stronger in flavour and versatile in use

The carrot has its origins in modern-day Afghanistan, Pakistan and Iran and dates back to ancient times. There are many different varieties, in a wide range of colours from orange, white, yellow to purple.
The flavour of the carrot is rather sweet, but can also taste slightly bitter.

It is rich in vitamins B6, C, E as well as beta-carotene, calcium, potassium, iron, folic acid and zinc.

Only wash the carrots immediately before use. Wrapped in a damp kitchen towel, the carrots can be stored in the vegetable compartment of the fridge at between 3 and 10 degrees Celsius. This will keep them for between 7 and 10 days
