Sicily. That makes 80% tomato products in the jar. Many ketchups start with water and rely on sugar to restore the flavor. Here, the mixture is simmered down until the tomato itself takes
center stage: thick without cornstarch, fruity without artificial flavoring. Apple cider vinegar and Aceto Balsamico instead of brandy vinegar. Brandy vinegar is cheap, odorless, and tastes
of nothing but sourness. That’s exactly why it’s in almost every ketchup, including most organic ones. Not here. It’s acidulated with apple cider vinegar and 4% Aceto Balsamico di Modena
