Endive

Endive originates from the eastern Mediterranean and was already known to the Romans and Greeks. It was first described in Northern Europe in the 16th century. In terms of flavour, endive is one of the bitter varieties.  

Although lettuce contains fewer minerals and vitamins, it can score points with its high fibre content.
It is rich in vitamins A, C and K, as well as potassium and magnesium.  

Endive is best kept loosely wrapped in a damp cloth in the fridge for up to 3 days.
