Fennel

Fennel is said to have its origins in the Near East and the Mediterranean region. Today it also grows in Italy, southern France, North Africa, Spain and even in small quantities in southern Germany.
It tastes rather sweet and is reminiscent of aniseed and liquorice, but also has a slightly bitter note.

It is rich in vitamins A, B and C, as well as sodium, potassium, calcium, magnesium and phosphorus.

Fennel should not be stored for too long. It can be stored for up to two weeks in the fridge, wrapped in a damp cloth. Unrefrigerated, it will only keep for two to three days.
