The seed coat is removed when shelling the green peas. Without soaking, half green peas are quicker to prepare than whole peas and are ideal for hearty stews and soups. You can even conjure
up desserts, e.g. sweet pea mousse with mint.
Pea puree offers an interesting change from the usual mashed potatoes. Delicious fillings can also be made from shelling
peas.
Simmer 100 g of split green peas in plenty of water for 60 90 minutes with the lid on, without soaking them first. Add salt only at the end of the cooking time.
