The tuber is native to North America, where it was used by the indigenous people as a vegetable, medicinal plant and animal feed. It is named after the Topinambus Indian tribe.
Jerusalem artichoke contains inulin, which also makes the tubers a valuable food for diabetics. It is also commonly known as the ‘diabetic potato’. When cooked, Jerusalem artichoke tastes nutty, sweet and slightly artichoke-like.

Jerusalem artichoke contains vitamin A and many B vitamins, as well as potassium, calcium, iron and silicon.

The tuber can be stored in an airtight container for up to a month. Wrapped in a damp cloth, Jerusalem artichokes can be stored in the refrigerator for up to two weeks.
