Lamb's lettuce

Lamb's lettuce originated in Europe and North Africa. In the past, lamb's lettuce was initially used for medicinal purposes, especially in monasteries. It has been used as a salad since the 18th century.

The leaves contain many bioactive substances, such as vitamin C, carotenoids, phenols, folic acid, sterols and omega-3 fatty acids, and the vitamin C content in particular decreases with prolonged storage, as does the carotenoid and phenol content to a lesser extent.

Lamb's lettuce can be placed in a damp kitchen towel and stored in the vegetable compartment of the fridge for up to four days.
