Radicchio salad

Radicchio is a popular vegetable from Italy, but here it is more often prepared as a salad.
The tightly closed small head of lettuce with its thick, reddish-purple leaves and white, particularly bitter leaf ribs is a great addition to milder salads, both visually and in terms of flavour.

It is rich in vitamins B1, B2 and C, as well as potassium, calcium and phosphorus. The red varieties contain more bitter substances than the green ones.

Radicchio will keep for about a week in the vegetable drawer.
