Sugarloaf salad

Sugar loaf, a winter salad, originally comes from Italy, southern France, Austria and Ticino. It resembles Chinese cabbage in appearance, but is very closely related to chicory and radicchio. Its matt, light green to light yellow, crisp leaves have a bitter, tangy flavour.

Like all lettuces, sugar loaf is also low in calories. It contains vitamins B, C and potassium, beta-carotene and calcium.

Whole heads can be stored in a cool, dark place in the cellar for several weeks as long as it is dry and airy.
