Lentils, green

Intensely nutty delicacy. The small, green speckled lentils are characterized by their nutty, spicy taste. They are firm-boiling and therefore do not fall apart when cooked. The cultivation of protein crops such as lentils, beans or lupins contributes to a more varied crop rotation and thus to maintaining soil health. Legumes do not require nitrogen fertilizer during cultivation and thus reduce the burden on the soil. At the same time, they promote soil fertility through the accumulation of atmospheric nitrogen in their roots. They also serve as an important food source for pollinators such as bees.
